Swamp Cabbage, I just learned, is a recipe that involves hearts of palms (apparently best if freshly harvested your own dang self) and bacon - lots of it, with whatever other ingredients you want, stewed together.While I have not (yet!) eaten swamp cabbage, I imagine it tastes like this band sounds.
